Ingredients
- 1 bag tater tots
- 1 lb ground beef (cooked)
- 6 eggs
- 1 cup milk
- 2 cups shredded cheese (cheddar or your choice)
- 1 onion (diced)
- 1 bell pepper (chopped)
- Salt and pepper to taste
- 1 tablespoon olive oil (for cooking)
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat. Sauté the diced onion and bell peppers until tender.
- In a large bowl, whisk together the eggs and milk. Season with salt and pepper.
- In a greased baking dish, spread the cooked ground beef evenly at the bottom.
- Layer the sautéed vegetables on top of the beef.
- Arrange the tater tots on top of the vegetables, ensuring they cover the surface.
- Pour the egg mixture evenly over the tater tots.
- Sprinkle shredded cheese over the entire dish.
- Bake for 35–40 minutes, or until the eggs are set and the cheese is bubbly.
- Allow it to cool slightly before serving.
