- ¼ cup chopped green onion (white parts for cooking, green for garnish)
- ⅓ cup low-sodium soy sauce or tamari
- 2 tablespoons water or vegetable broth
- 2 teaspoons toasted sesame oil
- 1 tablespoon rice vinegar
- 1 tablespoon coconut or brown sugar (adjust to taste)
- 2–3 tablespoons honey or maple syrup (for vegan option)
- ¼ teaspoon red pepper flakes (optional)
- 1 tablespoon cornstarch mixed with 1 tablespoon water
Instructions
- Cook the noodles: Prepare noodles according to package directions. Drain, rinse under cool water, and toss with a few drops of sesame oil to prevent sticking.
- Sauté aromatics: In a large skillet or wok, heat oil over medium-high heat. Add minced garlic, grated ginger, and chopped green onions. Sauté for 1–2 minutes until fragrant.
- Add vegetables: Stir in mushrooms and bok choy. Cook for 5–7 minutes until tender but still slightly crisp.
- Make the sauce: In a small bowl, whisk together soy sauce, water, sesame oil, rice vinegar, sugar, honey, red pepper flakes, and the cornstarch slurry until smooth.
- Combine everything: Add cooked noodles to the pan with vegetables. Pour the sauce over the top and toss until noodles are evenly coated.
- Simmer and serve: Let the noodles cook for 3–4 minutes until the sauce thickens and glazes the noodles. Remove from heat, garnish with sesame seeds and green onions, and serve warm.
