Description

A delightful and comforting Butter Chicken Skillet dish that’s perfect for any weeknight dinner or family brunch.


Ingredients

  • 4 pieces boneless skinless chicken breasts or thighs
  • 4 tablespoons butter
  • 4 cloves garlic, minced
  • 1 cup chicken broth (low-sodium recommended)
  • 2 tablespoons honey
  • 1 teaspoon paprika
  • Salt and cracked black pepper to taste
  • 1 cup caramelized onions
  • 1 cup shredded cheddar or Monterey Jack cheese (optional)
  • 2 tablespoons dried parsley
  • 1 teaspoon cayenne pepper or hot sauce
  • 1/2 cup heavy cream
  • 1 cup cherry tomatoes and kalamata olives


Instructions

  1. Season the chicken with salt, pepper, and paprika.
  2. Melt half the butter over medium-high heat and sear the chicken for 6-7 minutes per side until cooked through. Remove from skillet.
  3. Add the remaining butter to the skillet, stir in the minced garlic and cook for 30 seconds.
  4. Pour in the chicken broth, honey, and heavy cream, then add the onions, tomatoes, and olives. Simmer for 5 minutes.
  5. Return the chicken to the skillet, top with cheese if desired, sprinkle with parsley, and serve warm.

Notes

Serve directly from the pan or portion onto plates. Pair with rice or garlic bread.
