Description

A flavorful and comforting Thai Inspired Chicken Soup that is perfect for any occasion.


Ingredients

  • 1 lb chicken breast, diced
  • 2 cups chicken broth
  • 1 can coconut milk
  • 2 tablespoons red curry paste
  • 1 tablespoon fresh ginger, minced
  • 1 stalk lemongrass, chopped
  • 2 cups mixed fresh herbs (basil, cilantro)
  • 1 cup mushrooms, sliced
  • 1 bell pepper, sliced
  • Juice of 1 lime
  • Salt to taste


Instructions

  1. Heat a splash of oil in a pot over medium heat. Sauté the minced ginger and red curry paste for 1-2 minutes until fragrant.
  2. Add the diced chicken to the pot and cook until it’s lightly browned.
  3. Pour in the chicken broth and coconut milk. Add the chopped lemongrass, sliced mushrooms, and bell pepper.
  4. Bring the mixture to a simmer and let it cook for about 15 minutes, or until the chicken is cooked through.
  5. Stir in the fresh herbs and squeeze in the lime juice.
  6. Season with salt to taste and serve hot.

Notes

Garnish with fresh herbs and lime wedges. Pairs well with jasmine rice or spring rolls.
