A flavorful and comforting Thai Inspired Chicken Soup that is perfect for any occasion.
Ingredients
- 1 lb chicken breast, diced
- 2 cups chicken broth
- 1 can coconut milk
- 2 tablespoons red curry paste
- 1 tablespoon fresh ginger, minced
- 1 stalk lemongrass, chopped
- 2 cups mixed fresh herbs (basil, cilantro)
- 1 cup mushrooms, sliced
- 1 bell pepper, sliced
- Juice of 1 lime
- Salt to taste
Instructions
- Heat a splash of oil in a pot over medium heat. Sauté the minced ginger and red curry paste for 1-2 minutes until fragrant.
- Add the diced chicken to the pot and cook until it’s lightly browned.
- Pour in the chicken broth and coconut milk. Add the chopped lemongrass, sliced mushrooms, and bell pepper.
- Bring the mixture to a simmer and let it cook for about 15 minutes, or until the chicken is cooked through.
- Stir in the fresh herbs and squeeze in the lime juice.
- Season with salt to taste and serve hot.
Notes
Garnish with fresh herbs and lime wedges. Pairs well with jasmine rice or spring rolls.
