A creamy and flavorful Thai Peanut Chicken dish that’s perfect for family dinners or gatherings.
Ingredients
- 3-4 boneless, skinless chicken breasts
- 3 cloves fresh garlic, minced
- 1-inch piece fresh ginger, minced
- 1 cup full-fat coconut milk
- 1/2 cup natural peanut butter
- 1/4 cup low-sodium soy sauce
- Juice of 1 lime
- 1 tsp chili flakes (adjust to taste)
- 2 green onions, sliced (for garnish)
- Fresh cilantro (optional, for garnish)
Instructions
- Chop the chicken breasts into bite-sized pieces and mince the garlic and ginger.
- In a large skillet, heat a splash of oil over medium-high heat. Add the chicken pieces and cook for about 5-7 minutes until golden brown and cooked through.
- In a separate bowl, whisk together the peanut butter, coconut milk, soy sauce, lime juice, and chili flakes until smooth.
- Pour the peanut sauce over the chicken in the skillet and stir gently to coat evenly. Let it simmer for an additional 5 minutes.
- Remove from heat and garnish with sliced green onions and fresh cilantro before serving.
Notes
For a vegetarian twist, substitute chicken with tofu. Store leftovers in an airtight container for up to 3 days, or freeze for up to a month.
