Ingredients
- 2 lbs beef chuck, cut into 1-inch pieces
- 4 cups beef broth
- 4 large potatoes, peeled and cubed
- 3 carrots, sliced
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- In a large pot or slow cooker, heat the olive oil over medium-high heat. Brown the beef in batches, setting each browned piece aside in the slow cooker.
- Add the onions and garlic to the pot, sautéing until softened and aromatic.
- Stir in the tomato paste, Worcestershire sauce, and thyme; let it cook for an additional minute to meld the flavors.
- Carefully pour in the beef broth, then add the cubed potatoes and sliced carrots.
- Season generously with salt and pepper, ensuring every bite is full of flavor.
- Cover and slow cook on low for 7-8 hours, or on high for 4-5 hours, until the beef is meltingly tender.
