Description

A comforting and flavorful beef stew, perfect for chilly evenings and gatherings.


Ingredients

  • 2 lbs beef chuck, cut into 1-inch pieces
  • 4 cups beef broth
  • 4 large potatoes, peeled and cubed
  • 3 carrots, sliced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 tablespoons olive oil


Instructions

  1. In a large pot or slow cooker, heat the olive oil over medium-high heat. Brown the beef in batches, setting each browned piece aside in the slow cooker.
  2. Add the onions and garlic to the pot, sautéing until softened and aromatic.
  3. Stir in the tomato paste, Worcestershire sauce, and thyme; let it cook for an additional minute to meld the flavors.
  4. Carefully pour in the beef broth, then add the cubed potatoes and sliced carrots.
  5. Season generously with salt and pepper, ensuring every bite is full of flavor.
  6. Cover and slow cook on low for 7-8 hours, or on high for 4-5 hours, until the beef is meltingly tender.
  7. Serve hot and enjoy the comforting flavors.

Notes

For extra depth of flavor, consider adding a splash of red wine while sautéing the vegetables.
