Description

Fluffy, ethereal pancakes that practically melt in your mouth, perfect for elevating any breakfast experience.


Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • 1/2 cup milk (whole or alternative)
  • 3 large eggs, separated
  • 1 teaspoon vanilla extract
  • A pinch of salt
  • Cooking spray or butter for the skillet


Instructions

  1. In a bowl, whisk together the flour, sugar, baking powder, and salt.
  2. In another bowl, beat the egg yolks, then add the milk and vanilla, mixing until smooth.
  3. Combine the wet ingredients with the dry ingredients, stirring until just blended.
  4. In a clean mixing bowl, whip the egg whites until stiff peaks form.
  5. Gently fold the egg whites into the batter, being careful not to deflate the mixture.
  6. Preheat your skillet over low heat and lightly grease it.
  7. Pour a small amount of batter into the skillet and cover with a lid, cooking until bubbles form on the surface.
  8. Flip the pancake and cook for an additional minute or two until golden brown.
  9. Repeat with the remaining batter, adjusting the heat as necessary.
