Description

Ingredients

  • 4 large potatoes, peeled and diced
  • 1 medium onion, diced
  • 2 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • Salt and pepper to taste
  • 4 strips of bacon, cooked and crumbled
  • Chives or green onions for garnish


Instructions

  1. In a large pot, sauté the diced onion until it becomes translucent.
  2. Add the diced potatoes and broth. Bring to a boil.
  3. Reduce heat and let simmer until potatoes are tender, about 15-20 minutes.
  4. Using a potato masher, mash a portion of the potatoes in the pot for a creamier consistency.
  5. Stir in heavy cream, shredded cheese, and sour cream until everything is melted and combined.
  6. Season with salt and pepper to taste.
