Description

A luxurious coffee chocolate cake with mascarpone frosting, perfect for special occasions.


Ingredients

  • 2 cups all-purpose flour
  • 1 ½ cups granulated sugar
  • ½ cup unsweetened cocoa powder
  • 1 cup unsalted butter, softened
  • 4 large eggs
  • 1 cup brewed espresso
  • 1 ½ cups mascarpone cheese
  • 1 cup heavy cream
  • ½ tsp vanilla extract
  • Pinch of salt


Instructions

  1. Preheat the oven to 350°F (175°C) and grease your cake pans.
  2. In a bowl, combine flour, cocoa powder, baking powder, and salt. Set aside.
  3. In a mixer, beat butter and sugar until light and fluffy. Gradually add eggs one at a time.
  4. Mix in the dry ingredients and brewed espresso until just combined.
  5. Pour the batter into the prepared pans and bake for 25 minutes or until a toothpick emerges clean.
  6. Cool the cakes in the pan for 10 minutes before transferring them to a wire rack.
  7. For the frosting, whip the heavy cream until soft peaks form, then fold in mascarpone and vanilla.
  8. Once the cakes cool, soak each layer with more brewed espresso and frost generously.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3-4 days or freeze slices for later enjoyment.
