A luxurious coffee chocolate cake with mascarpone frosting, perfect for special occasions.
Ingredients
- 2 cups all-purpose flour
- 1 ½ cups granulated sugar
- ½ cup unsweetened cocoa powder
- 1 cup unsalted butter, softened
- 4 large eggs
- 1 cup brewed espresso
- 1 ½ cups mascarpone cheese
- 1 cup heavy cream
- ½ tsp vanilla extract
- Pinch of salt
Instructions
- Preheat the oven to 350°F (175°C) and grease your cake pans.
- In a bowl, combine flour, cocoa powder, baking powder, and salt. Set aside.
- In a mixer, beat butter and sugar until light and fluffy. Gradually add eggs one at a time.
- Mix in the dry ingredients and brewed espresso until just combined.
- Pour the batter into the prepared pans and bake for 25 minutes or until a toothpick emerges clean.
- Cool the cakes in the pan for 10 minutes before transferring them to a wire rack.
- For the frosting, whip the heavy cream until soft peaks form, then fold in mascarpone and vanilla.
- Once the cakes cool, soak each layer with more brewed espresso and frost generously.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3-4 days or freeze slices for later enjoyment.
