A simple yet delicious pasta dish combining fresh tomatoes and aromatic garlic, perfect for busy weeknights.
Ingredients
- Pasta of your choice (spaghetti or penne)
- Fresh tomatoes, diced
- Garlic, minced
- Olive oil
- Fresh basil leaves, torn
- Salt and pepper to taste
- Parmesan cheese, for serving (optional)
Instructions
- Cook the pasta according to package instructions until al dente. Reserve a cup of pasta water, then drain.
- In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
- Stir in the diced tomatoes and season with salt and pepper. Cook for about 5 minutes until they soften and release their juices.
- Toss in the cooked pasta, adding reserved pasta water a little at a time to create a light sauce. Mix well to combine all the ingredients.
- Remove from heat and fold in the torn basil leaves. Adjust seasoning if necessary.
- Serve immediately, garnished with Parmesan cheese, if desired.
Notes
Pairs beautifully with a side salad and chilled white wine. Leftovers can be stored in an airtight container in the refrigerator for up to three days.
