Description

A simple yet delicious pasta dish combining fresh tomatoes and aromatic garlic, perfect for busy weeknights.


Ingredients

  • Pasta of your choice (spaghetti or penne)
  • Fresh tomatoes, diced
  • Garlic, minced
  • Olive oil
  • Fresh basil leaves, torn
  • Salt and pepper to taste
  • Parmesan cheese, for serving (optional)


Instructions

  1. Cook the pasta according to package instructions until al dente. Reserve a cup of pasta water, then drain.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
  3. Stir in the diced tomatoes and season with salt and pepper. Cook for about 5 minutes until they soften and release their juices.
  4. Toss in the cooked pasta, adding reserved pasta water a little at a time to create a light sauce. Mix well to combine all the ingredients.
  5. Remove from heat and fold in the torn basil leaves. Adjust seasoning if necessary.
  6. Serve immediately, garnished with Parmesan cheese, if desired.

Notes

Pairs beautifully with a side salad and chilled white wine. Leftovers can be stored in an airtight container in the refrigerator for up to three days.
