Ingredients
- 4 boneless, skinless chicken thighs
- 2 tablespoons olive oil
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 cup plain yogurt
- 1 cup chicken broth
- 1 teaspoon paprika
- 1 teaspoon cumin
- 1/2 teaspoon black pepper
- Fresh parsley, for garnish
Instructions
- Heat the olive oil in a large pan over medium heat.
- Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the garlic and cook for an additional minute.
- Season the chicken thighs with salt, paprika, and cumin. Add them to the pan and cook until browned on both sides, roughly 6-7 minutes per side.
- Pour in the chicken broth, bring to a simmer, then cover and cook for 15 minutes.
- In a separate bowl, mix the yogurt with a spoonful of the broth to temper it. Stir this mixture back into the pan.
- Cook for another 5 minutes, allowing the sauce to thicken slightly.
- Garnish with freshly chopped parsley before serving.
