Description

A comforting Tuscan soup filled with savory Italian sausage, vibrant kale, and a creamy broth, perfect for chilly evenings.


Ingredients

  • 4 links Italian sausage (sweet or spicy)
  • 4 slices of bacon
  • 4 cups kale, chopped
  • 4 large potatoes, diced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Red pepper flakes (optional for spice)


Instructions

  1. In a large pot, cook the Italian sausage and bacon over medium heat until browned. Remove and set aside, leaving the drippings.
  2. In the same pot, sauté chopped onions until translucent. Add minced garlic and cook for another minute until fragrant.
  3. Add diced potatoes and chicken broth. Bring to a boil, then reduce heat and simmer until potatoes are tender.
  4. Stir in chopped kale, cooked sausage, and bacon. Simmer for an additional 5 minutes.
  5. Stir in heavy cream and season with salt, pepper, and red pepper flakes if desired. Serve hot and enjoy!

Notes

For a lighter version, substitute turkey sausage or use vegetable broth for a vegetarian option.
