Description

A versatile and satisfying wrap filled with black beans, fresh veggies, and cheese, perfect for any occasion.


Ingredients

  • 1 can black beans, rinsed and drained
  • 1 cup fresh veggies (e.g., lettuce, tomato, bell pepper)
  • 4 large flour tortillas
  • 1 cup shredded cheese (e.g., cheddar or Mexican blend)
  • 4 tostadas
  • 1 tablespoon taco seasoning
  • 1 avocado, sliced
  • Sour cream or yogurt (optional)
  • Olive oil or cooking spray for frying


Instructions

  1. In a mixing bowl, combine the rinsed black beans, taco seasoning, and your chosen fresh veggies.
  2. Heat a large skillet over medium heat, greasing it lightly with olive oil.
  3. Lay a tortilla flat on a clean surface, and spoon a generous portion of the black bean mixture into the center.
  4. Sprinkle shredded cheese on top, then add a crunchy tostada and slices of avocado.
  5. Fold in the sides of the tortilla over the filling and gently flip it seam-side down into the hot skillet.
  6. Cook for about 2-3 minutes on each side until the wrap is golden brown and crispy.
  7. Serve warm, with a dollop of sour cream or yogurt on the side if desired.

Notes

To keep leftovers fresh, store in an airtight container in the refrigerator for about 3-4 days. For longer storage, freeze ungrilled wraps for up to 2 months.
