Ingredients
- 1 can black beans, rinsed and drained
- 1 cup fresh veggies (e.g., lettuce, tomato, bell pepper)
- 4 large flour tortillas
- 1 cup shredded cheese (e.g., cheddar or Mexican blend)
- 4 tostadas
- 1 tablespoon taco seasoning
- 1 avocado, sliced
- Sour cream or yogurt (optional)
- Olive oil or cooking spray for frying
Instructions
- In a mixing bowl, combine the rinsed black beans, taco seasoning, and your chosen fresh veggies.
- Heat a large skillet over medium heat, greasing it lightly with olive oil.
- Lay a tortilla flat on a clean surface, and spoon a generous portion of the black bean mixture into the center.
- Sprinkle shredded cheese on top, then add a crunchy tostada and slices of avocado.
- Fold in the sides of the tortilla over the filling and gently flip it seam-side down into the hot skillet.
- Cook for about 2-3 minutes on each side until the wrap is golden brown and crispy.
- Serve warm, with a dollop of sour cream or yogurt on the side if desired.
