Ingredients
- 3-4 pounds beef chuck roast
- 1 tablespoon olive oil
- 1 onion, chopped
- 4 garlic cloves, minced
- 1 tablespoon ground cumin
- 1 tablespoon chili powder
- 1 teaspoon smoked paprika
- 1 jalapeño, minced (optional for heat)
- 1 cup beef broth
- Fresh cilantro, for garnish
- Lime wedges, for serving
Instructions
- Cut the beef chuck roast into large chunks for even cooking and seasoning absorption.
- In a skillet, heat the olive oil over medium-high heat and sear the beef pieces until browned on all sides, then transfer to the slow cooker.
- Sauté the chopped onion and minced garlic in the same skillet until fragrant, about 2-3 minutes.
- Sprinkle the cumin, chili powder, and smoked paprika over the browned beef, and add the sautéed onion and garlic.
- Pour in the beef broth and add the minced jalapeño if desired. Stir to combine well.
- Cover and cook on low for 6-8 hours, or until the beef is tender and shreddable.
- Remove the beef and shred it with two forks. Return the shredded beef to the slow cooker and mix with juices.
Notes
For extra flavor, marinate the beef overnight with spices and lime juice before cooking. Ensure the beef is heated to at least 165°F when reheating.
