Ingredients
- 2 boneless, skinless chicken breasts (grilled or roasted)
- 1 ripe avocado
- 4 slices of your choice of bread (sourdough or whole grain)
- 1 cup shredded cheese (cheddar or mozzarella)
- 1 tablespoon olive oil
- Salt and pepper, to taste
- Fresh herbs (like cilantro or parsley) for garnish
Instructions
- If you haven’t done so already, cook the chicken breasts until fully cooked, then slice them into thin pieces.
- Meanwhile, slice the avocado in half, remove the pit, and scoop out the flesh. Mash it gently with a fork while seasoning it with salt and pepper.
- Heat olive oil in a skillet over medium heat. Toast the bread slices in the skillet until golden brown on both sides.
- On one side of each slice of bread, layer the mashed avocado, followed by sliced chicken, and sprinkle cheese on top.
- Close the sandwich and return it to the skillet, pressing down lightly. Cook until the cheese melts, about 2-3 minutes per side.
- Remove from heat, slice, and garnish with fresh herbs if desired.
Notes
For added flavor, marinate the chicken in lime juice and spices. Use rotisserie chicken for a quick option.
