A comforting and flavorful slow cooker chili that’s perfect for weeknight dinners or cozy family brunches.
Ingredients
- 1 pound ground beef (or turkey for a lighter option)
- 1 medium onion, chopped
- 1 bell pepper, diced (any color you prefer)
- 2 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) black beans, drained and rinsed
- 2 tablespoons chili powder
- 1 tablespoon cumin
- Salt and pepper to taste
Instructions
- Brown the ground beef in a pan over medium heat and drain excess fat.
- In your slow cooker, combine the cooked beef, chopped onions, diced bell peppers, and minced garlic.
- Pour in the diced tomatoes (juices included), kidney beans, black beans, chili powder, cumin, salt, and pepper. Stir well to combine.
- Set your slow cooker on low for 6 hours, adjusting cooking times if necessary.
- Taste and adjust seasonings just before serving, if necessary.
Notes
For a vegetarian option, use lentils instead of meat. Enjoy with shredded cheese, sour cream, or fresh cilantro.
