Description

A comforting and flavorful slow cooker chili that’s perfect for weeknight dinners or cozy family brunches.


Ingredients

  • 1 pound ground beef (or turkey for a lighter option)
  • 1 medium onion, chopped
  • 1 bell pepper, diced (any color you prefer)
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 2 tablespoons chili powder
  • 1 tablespoon cumin
  • Salt and pepper to taste


Instructions

  1. Brown the ground beef in a pan over medium heat and drain excess fat.
  2. In your slow cooker, combine the cooked beef, chopped onions, diced bell peppers, and minced garlic.
  3. Pour in the diced tomatoes (juices included), kidney beans, black beans, chili powder, cumin, salt, and pepper. Stir well to combine.
  4. Set your slow cooker on low for 6 hours, adjusting cooking times if necessary.
  5. Taste and adjust seasonings just before serving, if necessary.

Notes

For a vegetarian option, use lentils instead of meat. Enjoy with shredded cheese, sour cream, or fresh cilantro.
