Ingredients
- 2 cooked chicken breasts, shredded or diced
- 1 ripe avocado, diced
- 1 cup cooked rice (white or brown)
- ½ cup black beans, rinsed and drained
- 1 cup shredded cheese (cheddar or your choice)
- 4 large tortillas
- 1 small red onion, finely chopped
- 1 lime, juiced
- Fresh cilantro, chopped (optional)
- Salt and pepper to taste
Instructions
- In a large bowl, combine the shredded chicken, avocado, rice, black beans, onion, lime juice, and cilantro. Season with salt and pepper.
- Warm the tortillas briefly in a pan or microwave to make them pliable.
- Place a generous amount of the filling on each tortilla, then fold in the sides and roll tightly.
- Optional: To add crispness, heat the burritos in a skillet until golden brown on both sides.
- Slice in half and serve with your favorite salsa or dipping sauce.
Notes
These burritos can be made ahead of time; simply prepare the filling and assemble just before serving for the freshest taste. Store leftovers in an airtight container for up to three days.
