Description

Satisfying and nutritious burritos filled with seasoned chicken, creamy avocado, and a medley of fresh ingredients.


Ingredients

  • 2 cooked chicken breasts, shredded or diced
  • 1 ripe avocado, diced
  • 1 cup cooked rice (white or brown)
  • ½ cup black beans, rinsed and drained
  • 1 cup shredded cheese (cheddar or your choice)
  • 4 large tortillas
  • 1 small red onion, finely chopped
  • 1 lime, juiced
  • Fresh cilantro, chopped (optional)
  • Salt and pepper to taste


Instructions

  1. In a large bowl, combine the shredded chicken, avocado, rice, black beans, onion, lime juice, and cilantro. Season with salt and pepper.
  2. Warm the tortillas briefly in a pan or microwave to make them pliable.
  3. Place a generous amount of the filling on each tortilla, then fold in the sides and roll tightly.
  4. Optional: To add crispness, heat the burritos in a skillet until golden brown on both sides.
  5. Slice in half and serve with your favorite salsa or dipping sauce.

Notes

These burritos can be made ahead of time; simply prepare the filling and assemble just before serving for the freshest taste. Store leftovers in an airtight container for up to three days.
