Ingredients
- 4-6 large flour tortillas
- 4-6 eggs
- 1 cup shredded cheese (cheddar or your favorite)
- 1 bell pepper, diced
- 1 onion, diced
- 1 cup spinach (fresh or frozen)
- 1/2 cup salsa or pico de gallo
- 1 cup ground beef (optional)
- 2 tablespoons olive oil or butter
- Seasonings (salt, pepper, and cumin)
Instructions
- Heat olive oil or butter in a skillet over medium heat.
- Sauté the diced onions and bell peppers until softened.
- Add ground beef, season with salt, pepper, and cumin, and cook until browned.
- In a bowl, whisk the eggs and pour them into the skillet with the veggies and beef.
- Scramble until the eggs are lightly cooked.
- Stir in the spinach until it wilts and the cheese melts.
- Spoon the mixture onto flour tortillas, adding salsa or pico de gallo as desired.
- Roll the tortillas carefully, tucking in the sides to secure the filling.
- Place burritos seam-side down in the skillet and toast slightly for added crunch.
