Description

Delicious and portable breakfast burritos packed with flavorful scrambled eggs, vegetables, and optional ground beef.


Ingredients

  • 4-6 large flour tortillas
  • 4-6 eggs
  • 1 cup shredded cheese (cheddar or your favorite)
  • 1 bell pepper, diced
  • 1 onion, diced
  • 1 cup spinach (fresh or frozen)
  • 1/2 cup salsa or pico de gallo
  • 1 cup ground beef (optional)
  • 2 tablespoons olive oil or butter
  • Seasonings (salt, pepper, and cumin)


Instructions

  1. Heat olive oil or butter in a skillet over medium heat.
  2. Sauté the diced onions and bell peppers until softened.
  3. Add ground beef, season with salt, pepper, and cumin, and cook until browned.
  4. In a bowl, whisk the eggs and pour them into the skillet with the veggies and beef.
  5. Scramble until the eggs are lightly cooked.
  6. Stir in the spinach until it wilts and the cheese melts.
  7. Spoon the mixture onto flour tortillas, adding salsa or pico de gallo as desired.
  8. Roll the tortillas carefully, tucking in the sides to secure the filling.
  9. Place burritos seam-side down in the skillet and toast slightly for added crunch.

Notes

Pair burritos with fresh fruit, Greek yogurt, or a spicy avocado dip for the perfect breakfast spread.
