Description

A comforting and creamy loaded potato soup that’s perfect for cozy nights and gatherings.


Ingredients

  • 4 large potatoes, peeled and diced
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 4 strips bacon, cooked and crumbled
  • Salt to taste
  • Pepper to taste
  • Chives for garnish


Instructions

  1. Heat a large pot over medium heat. Sauté the chopped onion and minced garlic until they become translucent.
  2. Add the diced potatoes and the chicken or vegetable broth to the pot. Bring everything to a boil.
  3. Once boiling, reduce the heat and let the mixture simmer until the potatoes are tender, about 15-20 minutes.
  4. For a thicker texture, mash some of the potatoes directly in the pot using a potato masher or fork.
  5. Stir in the heavy cream and shredded cheddar cheese until melted and well combined.
  6. Season generously with salt and pepper to taste.
  7. Serve the soup hot, garnished with crumbled bacon and a sprinkle of chives.

Notes

Feel free to substitute different types of cheese for a unique flavor. Leftovers can be stored in an airtight container for up to 3 days.
