Ingredients
- 4 large potatoes, peeled and diced
- 1 onion, chopped
- 2 cloves of garlic, minced
- 4 cups chicken or vegetable broth
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- 4 strips bacon, cooked and crumbled
- Salt to taste
- Pepper to taste
- Chives for garnish
Instructions
- Heat a large pot over medium heat. Sauté the chopped onion and minced garlic until they become translucent.
- Add the diced potatoes and the chicken or vegetable broth to the pot. Bring everything to a boil.
- Once boiling, reduce the heat and let the mixture simmer until the potatoes are tender, about 15-20 minutes.
- For a thicker texture, mash some of the potatoes directly in the pot using a potato masher or fork.
- Stir in the heavy cream and shredded cheddar cheese until melted and well combined.
- Season generously with salt and pepper to taste.
- Serve the soup hot, garnished with crumbled bacon and a sprinkle of chives.
Notes
Feel free to substitute different types of cheese for a unique flavor. Leftovers can be stored in an airtight container for up to 3 days.
