Description

Ingredients

  • 4 large potatoes, peeled and diced
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 1 cup shredded cheese (cheddar or your preference)
  • 1/2 cup bacon, cooked and crumbled
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • Salt and pepper to taste
  • Chopped green onions for garnish


Instructions

  1. In a large pot, sauté the chopped onion and minced garlic over medium heat until they become translucent.
  2. Add the diced potatoes and broth, then bring the mixture to a boil.
  3. Once boiling, reduce the heat and let it simmer until the potatoes are tender.
  4. For a thicker consistency, mash some of the potatoes with a fork or potato masher.
  5. Stir in the heavy cream, cheese, and crumbled bacon until everything is well-combined.
  6. Season with salt and pepper to taste.

Notes

You can substitute cream with milk for a lighter version. For richer flavor, roast your potatoes with olive oil and salt before adding them to the soup.
