Ingredients

  • 4 medium Russet or Yukon Gold potatoes, peeled and diced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 tablespoons butter
  • 1/4 cup all-purpose flour
  • 4 cups chicken or vegetable broth
  • 1 cup milk or cream
  • Salt and pepper, to taste
  • Optional herbs: thyme or rosemary
  • Toppings: cheese, chives, bacon bits, or sour cream


Instructions

  1. Gather your ingredients.
  2. Peel and chop the potatoes into small, even pieces.
  3. Melt butter in a large pot over medium heat. Add onions and sauté until translucent, then stir in minced garlic for about 30 seconds.
  4. Sprinkle flour over the onions and garlic, stirring continuously for about 2 minutes.
  5. Gradually add broth while whisking to avoid lumps. Bring to a simmer.
  6. Add the chopped potatoes and simmer for 15-20 minutes until tender.
  7. Blend the soup until smooth using an immersion blender or transfer to a blender and return to the pot.
  8. Stir in milk or cream, season to taste, and heat through.

Notes

Serve topped with crispy bacon, shredded cheese, and chives. Great with bread or salad.
