Ingredients
- 4 medium Russet or Yukon Gold potatoes, peeled and diced
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 tablespoons butter
- 1/4 cup all-purpose flour
- 4 cups chicken or vegetable broth
- 1 cup milk or cream
- Salt and pepper, to taste
- Optional herbs: thyme or rosemary
- Toppings: cheese, chives, bacon bits, or sour cream
Instructions
- Gather your ingredients.
- Peel and chop the potatoes into small, even pieces.
- Melt butter in a large pot over medium heat. Add onions and sauté until translucent, then stir in minced garlic for about 30 seconds.
- Sprinkle flour over the onions and garlic, stirring continuously for about 2 minutes.
- Gradually add broth while whisking to avoid lumps. Bring to a simmer.
- Add the chopped potatoes and simmer for 15-20 minutes until tender.
- Blend the soup until smooth using an immersion blender or transfer to a blender and return to the pot.
- Stir in milk or cream, season to taste, and heat through.
Notes
Serve topped with crispy bacon, shredded cheese, and chives. Great with bread or salad.
