Ingredients
- 2 cups shredded boneless skinless chicken breasts
- 1 package (8 oz) cream cheese
- 1 can corn (15 oz), drained
- 1 can black beans (15 oz), drained and rinsed
- 1 can diced tomatoes (14.5 oz)
- 4 cups chicken broth
- Cumin, to taste
- Chili powder, to taste
- Garlic powder, to taste
- Onion powder, to taste
Instructions
- In your crockpot, combine the shredded chicken, corn, black beans, diced tomatoes, and chicken broth.
- Season generously with cumin, chili powder, garlic powder, and onion powder to taste.
- Set your crockpot to low and cook for 6-8 hours or on high for 3-4 hours.
- About 30 minutes before serving, mix in the cream cheese until it melts and blends smoothly.
- Serve warm in bowls, topped with your favorite garnishes.
Notes
Use rotisserie chicken for a quick shortcut and consider adding jalapeños for a spicy kick.
