Description

A comforting and easy-to-make white chicken chili enriched with cream cheese, perfect for weeknight dinners and gatherings.


Ingredients

  • 2 cups shredded boneless skinless chicken breasts
  • 1 package (8 oz) cream cheese
  • 1 can corn (15 oz), drained
  • 1 can black beans (15 oz), drained and rinsed
  • 1 can diced tomatoes (14.5 oz)
  • 4 cups chicken broth
  • Cumin, to taste
  • Chili powder, to taste
  • Garlic powder, to taste
  • Onion powder, to taste


Instructions

  1. In your crockpot, combine the shredded chicken, corn, black beans, diced tomatoes, and chicken broth.
  2. Season generously with cumin, chili powder, garlic powder, and onion powder to taste.
  3. Set your crockpot to low and cook for 6-8 hours or on high for 3-4 hours.
  4. About 30 minutes before serving, mix in the cream cheese until it melts and blends smoothly.
  5. Serve warm in bowls, topped with your favorite garnishes.

Notes

Use rotisserie chicken for a quick shortcut and consider adding jalapeños for a spicy kick.
