Description
A delightful fusion of fresh vegetables, savory hummus, and vibrant Mediterranean flavors wrapped in a soft tortilla.
Ingredients
- 4 large flour tortillas
- Vegan Feta to taste (optional)
- Extra hummus for spreading (approx. 1/4 cup for each wrap)
- 1/4 cup sliced sun-dried tomatoes (rehydrated)
- 2 cups roughly chopped mixed salad greens
- 1 cup chopped romaine lettuce
- 1/4 cup diced tomatoes
- 1/4 cup diced cucumbers (peeled and seeded)
- 1/4 cup chopped kalamata olives
- 1/4 cup shredded carrot
- 1/4 cup roasted red peppers
- 1/4 cup chopped pickles
- 1/4 cup sliced red onion
- 1 can (15 oz) chickpeas (strained and drained)
- 1/4 cup hummus
- 1 tbsp balsamic vinegar
- 1 tbsp reserved liquid from sun-dried tomatoes
- 1 tbsp chopped fresh parsley
Instructions
- Rehydrate the sun-dried tomatoes in warm water for 3-5 minutes. Drain and reserve the water.
- Chop the lettuce and other vegetables, and rinse and pat dry the chickpeas.
- In a bowl, combine all the chopped vegetables and chickpeas.
- In a separate bowl, mix hummus, balsamic vinegar, and the reserved sun-dried tomato water.
- Pour the dressing over the veggie mixture and toss well.
- Spread a layer of hummus on the bottom two-thirds of a tortilla.
- Place a quarter of the vegetable filling in the bottom third of the tortilla, leaving a 1/2-inch edge.
- Fold in the sides of the tortilla and roll tightly from the bottom up.
- Cut the wrap in half and serve immediately, or store in an airtight container for up to 3 days.
Notes
For a smoky flavor, consider adding grilled vegetables. To avoid tearing the tortillas, warm them slightly before filling.
