Description

A delightful fusion of fresh vegetables, savory hummus, and vibrant Mediterranean flavors wrapped in a soft tortilla.


Ingredients

  • 4 large flour tortillas
  • Vegan Feta to taste (optional)
  • Extra hummus for spreading (approx. 1/4 cup for each wrap)
  • 1/4 cup sliced sun-dried tomatoes (rehydrated)
  • 2 cups roughly chopped mixed salad greens
  • 1 cup chopped romaine lettuce
  • 1/4 cup diced tomatoes
  • 1/4 cup diced cucumbers (peeled and seeded)
  • 1/4 cup chopped kalamata olives
  • 1/4 cup shredded carrot
  • 1/4 cup roasted red peppers
  • 1/4 cup chopped pickles
  • 1/4 cup sliced red onion
  • 1 can (15 oz) chickpeas (strained and drained)
  • 1/4 cup hummus
  • 1 tbsp balsamic vinegar
  • 1 tbsp reserved liquid from sun-dried tomatoes
  • 1 tbsp chopped fresh parsley


Instructions

  1. Rehydrate the sun-dried tomatoes in warm water for 3-5 minutes. Drain and reserve the water.
  2. Chop the lettuce and other vegetables, and rinse and pat dry the chickpeas.
  3. In a bowl, combine all the chopped vegetables and chickpeas.
  4. In a separate bowl, mix hummus, balsamic vinegar, and the reserved sun-dried tomato water.
  5. Pour the dressing over the veggie mixture and toss well.
  6. Spread a layer of hummus on the bottom two-thirds of a tortilla.
  7. Place a quarter of the vegetable filling in the bottom third of the tortilla, leaving a 1/2-inch edge.
  8. Fold in the sides of the tortilla and roll tightly from the bottom up.
  9. Cut the wrap in half and serve immediately, or store in an airtight container for up to 3 days.

Notes

For a smoky flavor, consider adding grilled vegetables. To avoid tearing the tortillas, warm them slightly before filling.
