Description

A quick and easy appetizer that’s perfect for any occasion, packed with veggies and cream cheese.


Ingredients

  • 1 large tortilla wrap (whole wheat or regular)
  • 8 oz cream cheese, softened
  • 1 cup fresh spinach, chopped
  • 1 red bell pepper, finely diced
  • 1/2 cucumber, grated
  • 1/4 cup shredded carrots
  • Salt and pepper, to taste


Instructions

  1. In a bowl, combine the softened cream cheese, chopped spinach, bell pepper, grated cucumber, and shredded carrots. Mix until well blended. Add salt and pepper to taste.
  2. Place the tortilla wrap on a clean surface. Evenly spread the cream cheese mixture over the entire tortilla, covering it all the way to the edges.
  3. Starting from one end, carefully roll the tortilla tightly, making sure the filling stays in place.
  4. With a sharp knife, slice the roll into bite-sized pieces.

Notes

For a visual appeal, use a variety of colored vegetables. You can also swap the cream cheese for a plant-based option for a vegan version.
