A quick and easy appetizer that’s perfect for any occasion, packed with veggies and cream cheese.
Ingredients
- 1 large tortilla wrap (whole wheat or regular)
- 8 oz cream cheese, softened
- 1 cup fresh spinach, chopped
- 1 red bell pepper, finely diced
- 1/2 cucumber, grated
- 1/4 cup shredded carrots
- Salt and pepper, to taste
Instructions
- In a bowl, combine the softened cream cheese, chopped spinach, bell pepper, grated cucumber, and shredded carrots. Mix until well blended. Add salt and pepper to taste.
- Place the tortilla wrap on a clean surface. Evenly spread the cream cheese mixture over the entire tortilla, covering it all the way to the edges.
- Starting from one end, carefully roll the tortilla tightly, making sure the filling stays in place.
- With a sharp knife, slice the roll into bite-sized pieces.
Notes
For a visual appeal, use a variety of colored vegetables. You can also swap the cream cheese for a plant-based option for a vegan version.
