Description

A delicious creamy soup that combines tender chicken with rich parmesan flavor, perfect for soothing chilly evenings.


Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup grated parmesan cheese
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley for garnish


Instructions

  1. Place the chicken breasts at the bottom of the slow cooker.
  2. Add the diced onion, minced garlic, basil, oregano, salt, and pepper.
  3. Pour in the chicken broth, ensuring everything is covered.
  4. Cover and cook on low for 6-8 hours, or until the chicken is tender.
  5. Remove the chicken and shred it with two forks.
  6. Stir in the heavy cream and parmesan cheese until melted and combined.
  7. Return the shredded chicken to the pot, and mix well.
  8. Serve hot, garnished with fresh parsley.

Notes

For a different flavor, sauté the onions and garlic before adding them to the slow cooker. Feel free to add vegetables like spinach or mushrooms for extra nutrition.
