Ingredients
- 2 pounds chicken thighs, boneless and skinless
- 1 onion, finely chopped
- 4 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 can (14 oz) coconut milk
- 1 can (6 oz) tomato paste
- 2 tablespoons butter
- 2 tablespoons garam masala
- 1 tablespoon cumin
- 1 teaspoon cayenne pepper (adjust to taste)
- Salt and pepper to taste
- Fresh cilantro, for garnish
- Cooked rice or naan, for serving
Instructions
- Heat the butter in a skillet over medium heat and sauté the onion until soft and translucent, about 5 minutes.
- Add the garlic and ginger, cooking until fragrant, about 1 minute more.
- Transfer the onion mixture to the slow cooker. Then, add chicken thighs, coconut milk, tomato paste, garam masala, cumin, cayenne, salt, and pepper. Mix well.
- Cover and cook on low for 6 hours or high for 3 hours, until the chicken is tender.
- Shred the chicken right in the slow cooker with two forks, stirring to combine.
- Adjust seasoning if necessary and let it rest for a few minutes before serving.
Notes
For added depth of flavor, consider marinating the chicken in yogurt and spices for a few hours or overnight before cooking. Serve with basmati rice or naan.
