Description

A tender and flavorful slow-cooked butter chicken dish that blends spices beautifully for a comforting meal.


Ingredients

  • 2 pounds chicken thighs, boneless and skinless
  • 1 onion, finely chopped
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 can (14 oz) coconut milk
  • 1 can (6 oz) tomato paste
  • 2 tablespoons butter
  • 2 tablespoons garam masala
  • 1 tablespoon cumin
  • 1 teaspoon cayenne pepper (adjust to taste)
  • Salt and pepper to taste
  • Fresh cilantro, for garnish
  • Cooked rice or naan, for serving


Instructions

  1. Heat the butter in a skillet over medium heat and sauté the onion until soft and translucent, about 5 minutes.
  2. Add the garlic and ginger, cooking until fragrant, about 1 minute more.
  3. Transfer the onion mixture to the slow cooker. Then, add chicken thighs, coconut milk, tomato paste, garam masala, cumin, cayenne, salt, and pepper. Mix well.
  4. Cover and cook on low for 6 hours or high for 3 hours, until the chicken is tender.
  5. Shred the chicken right in the slow cooker with two forks, stirring to combine.
  6. Adjust seasoning if necessary and let it rest for a few minutes before serving.

Notes

For added depth of flavor, consider marinating the chicken in yogurt and spices for a few hours or overnight before cooking. Serve with basmati rice or naan.
