Description

A vibrant and colorful pasta salad featuring fresh vegetables, zesty dressing, and hearty noodles, perfect for gatherings and casual meals.


Ingredients

  • 8 oz pasta (fusilli or rotini)
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup bell peppers, diced (any color)
  • 1/4 cup red onion, finely chopped
  • 1 cup black olives, sliced
  • 1 cup shredded mozzarella cheese
  • 1/2 cup beef salami, diced
  • 1/2 cup Italian dressing (store-bought or homemade)
  • Fresh parsley, for garnish (optional)


Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and rinse under cold water to cool.
  2. In a large bowl, combine the cooked pasta, tomatoes, cucumber, bell peppers, red onion, olives, mozzarella, and beef salami.
  3. Drizzle the Italian dressing over the salad and toss everything together gently until well-coated.
  4. Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to develop.
  5. Before serving, garnish with fresh parsley if desired.

Notes

For extra flavor, consider roasting the bell peppers before mixing. Store leftovers in an airtight container for up to 3 days.
