Ingredients
- 8 oz pasta (fusilli or rotini)
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup bell peppers, diced (any color)
- 1/4 cup red onion, finely chopped
- 1 cup black olives, sliced
- 1 cup shredded mozzarella cheese
- 1/2 cup beef salami, diced
- 1/2 cup Italian dressing (store-bought or homemade)
- Fresh parsley, for garnish (optional)
Instructions
- Cook the pasta according to package instructions until al dente. Drain and rinse under cold water to cool.
- In a large bowl, combine the cooked pasta, tomatoes, cucumber, bell peppers, red onion, olives, mozzarella, and beef salami.
- Drizzle the Italian dressing over the salad and toss everything together gently until well-coated.
- Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to develop.
- Before serving, garnish with fresh parsley if desired.
Notes
