Description

A warm and hearty baked oatmeal combining the comforting flavors of pumpkin and chocolate, perfect for fall mornings.


Ingredients

  • 2 cups rolled oats
  • 1 cup pumpkin puree
  • 1 cup chocolate chips (semi-sweet or dark)
  • 1 cup milk (any kind, dairy or non-dairy)
  • 2 eggs
  • 1/2 cup brown sugar (or a substitute)
  • 1 tablespoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt


Instructions

  1. Preheat your oven to 350°F (175°C) and grease a baking dish.
  2. In a large bowl, combine the rolled oats, baking powder, cinnamon, nutmeg, and salt.
  3. In another bowl, whisk together the pumpkin puree, milk, eggs, brown sugar, and vanilla extract until smooth.
  4. Mix the wet and dry ingredients together until well combined. Fold in the chocolate chips gently.
  5. Pour the mixture into the prepared baking dish and spread it evenly.
  6. Bake for 30-35 minutes, or until the top is set and lightly golden.
  7. Allow it to cool for a few minutes before serving.

Notes

Enhance pumpkin flavor by using homemade pumpkin puree and check doneness a few minutes before the suggested time.
