Description

Delicious tacos filled with a warm and spicy chicken chili blend, perfect for gatherings.


Ingredients

  • 2 cups cooked chicken (shredded)
  • 1 onion (chopped)
  • 2 cloves garlic (minced)
  • 1 can canned green chilies
  • 1 cup chicken broth
  • 1 can white beans (rinsed and drained)
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tsp paprika
  • 8 taco shells
  • Toppings: sour cream, cheese, cilantro, avocado


Instructions

  1. In a large pot, sauté the chopped onion until translucent.
  2. Add minced garlic and cook until fragrant.
  3. Stir in the shredded chicken, green chilies, and spices; mix well.
  4. Pour in the chicken broth and let it simmer for about 10 minutes.
  5. Fold in the white beans, cooking for an additional 5 minutes.
  6. Fill taco shells with the chili mixture and top with your favorite garnishes.

Notes

Store leftovers in an airtight container in the fridge for up to 4 days or freeze for up to 3 months. Reheat in the microwave or stovetop.
