Ingredients
- 2 tablespoons olive oil
- 1 pound ground beef
- 1 large onion, chopped
- 3 cloves garlic, minced
- 1 bell pepper, diced (any color)
- 1 can (14.5 ounces) diced tomatoes
- 2 cans (15 ounces each) kidney beans, drained and rinsed
- 2 tablespoons chili powder
- 1 tablespoon cumin
- Salt and pepper to taste
- Optional: hot sauce for added spice
Instructions
- Heat the olive oil in a large pot over medium heat. Add the chopped onion and bell pepper; sauté until softened.
- Stir in the minced garlic, cooking for about 1 minute until fragrant.
- Add the ground beef, breaking it up with a spoon. Cook until browned and no longer pink.
- Incorporate the diced tomatoes, kidney beans, chili powder, cumin, salt, and pepper. Stir to combine.
- Bring the mixture to a simmer and reduce the heat. Allow it to cook uncovered for about 45 minutes, stirring occasionally.
- Adjust seasoning as needed, and serve warm.
Notes
For enhanced flavor, let the chili sit for a day before serving. Serve with cornbread or over rice for a hearty meal.
