Description

A delightful pasta salad with black beans, corn, and a zesty lime dressing, perfect for gatherings and meal prep.


Ingredients

  • 8 ounces whole wheat pasta (any shape works)
  • 1 can black beans, rinsed and drained
  • 1 cup corn (frozen or fresh)
  • 1 bell pepper, diced
  • 1/2 red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup lime juice
  • 1/4 cup Greek yogurt (for creaminess)
  • 1 teaspoon garlic powder
  • Salt and pepper to taste


Instructions

  1. Cook the pasta according to package instructions; drain and let it cool.
  2. In a large bowl, combine black beans, corn, bell pepper, red onion, and cilantro.
  3. In a separate bowl, whisk together lime juice, Greek yogurt, garlic powder, salt, and pepper until smooth.
  4. Once the pasta has cooled, add it to the vegetable mixture.
  5. Pour the dressing over and toss everything until well coated.
  6. Adjust seasoning if necessary and serve immediately or refrigerate for later.

Notes
