Ingredients
- 1 lb boneless, skinless chicken thighs
- 1 can creamed corn
- 1 cup corn kernels (frozen or fresh)
- 8 oz block cream cheese
- 1 packet ranch seasoning mix
- 1 cup shredded cheddar cheese
- Salt and pepper to taste
- Optional toppings: green onions, cilantro, lime wedges
Instructions
- Place the chicken thighs at the bottom of the slow cooker.
- Pour in the creamed corn and add the corn kernels.
- Cube the cream cheese and scatter it over the top.
- Sprinkle the ranch seasoning evenly, followed by salt and pepper.
- Cover, set the slow cooker to low, and cook for 6 hours.
- Near the end, stir in the shredded cheddar cheese until melted and incorporated.
- Serve warm, garnished with your favorite toppings.
Notes
For a vegetarian version, replace the chicken with chickpeas and use plant-based cream cheese.
