Description

A comforting dish combining succulent chicken with delightful street corn flavors, perfect for sharing with loved ones.


Ingredients

  • 1 lb boneless, skinless chicken thighs
  • 1 can creamed corn
  • 1 cup corn kernels (frozen or fresh)
  • 8 oz block cream cheese
  • 1 packet ranch seasoning mix
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste
  • Optional toppings: green onions, cilantro, lime wedges


Instructions

  1. Place the chicken thighs at the bottom of the slow cooker.
  2. Pour in the creamed corn and add the corn kernels.
  3. Cube the cream cheese and scatter it over the top.
  4. Sprinkle the ranch seasoning evenly, followed by salt and pepper.
  5. Cover, set the slow cooker to low, and cook for 6 hours.
  6. Near the end, stir in the shredded cheddar cheese until melted and incorporated.
  7. Serve warm, garnished with your favorite toppings.

Notes

For a vegetarian version, replace the chicken with chickpeas and use plant-based cream cheese.
