Description

A comforting slow cooker dish that combines tender chicken with vibrant street corn flavors, perfect for gatherings or cozy nights in.


Ingredients

  • 2 lbs chicken breast
  • 1 cup corn (fresh or frozen)
  • 1 red bell pepper, diced
  • 1/2 cup diced onion
  • 1 can black beans, drained and rinsed
  • 1 cup chicken broth
  • 1 tsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • 1/2 cup crumbled feta cheese
  • Fresh cilantro for garnish


Instructions

  1. In the slow cooker, layer the chicken breasts at the bottom.
  2. Top with corn, bell pepper, onion, and black beans.
  3. Pour the chicken broth over the ingredients.
  4. Season with chili powder, cumin, salt, and pepper.
  5. Cover and cook on low for 6 hours or until the chicken is tender.
  6. Shred the chicken with two forks and stir in the feta cheese.
  7. Serve warm, garnished with fresh cilantro.

Notes

For added flavor, consider marinating the chicken overnight. If short on time, use rotisserie chicken during the last hour of cooking.
