Ingredients
- 2 lbs chicken breast
- 1 cup corn (fresh or frozen)
- 1 red bell pepper, diced
- 1/2 cup diced onion
- 1 can black beans, drained and rinsed
- 1 cup chicken broth
- 1 tsp chili powder
- 1 tsp cumin
- Salt and pepper to taste
- 1/2 cup crumbled feta cheese
- Fresh cilantro for garnish
Instructions
- In the slow cooker, layer the chicken breasts at the bottom.
- Top with corn, bell pepper, onion, and black beans.
- Pour the chicken broth over the ingredients.
- Season with chili powder, cumin, salt, and pepper.
- Cover and cook on low for 6 hours or until the chicken is tender.
- Shred the chicken with two forks and stir in the feta cheese.
