Description

A delicious fusion of smokey BBQ chicken and creamy mac and cheese, perfect for cozy evenings or gatherings.


Ingredients

  • 2 cups cooked pasta (elbow macaroni or shells)
  • 2 cups shredded BBQ chicken (store-bought or homemade)
  • 2 cups shredded cheddar cheese (mozzarella for extra gooeyness)
  • 1 cup milk (whole or low-fat)
  • 1 tablespoon butter
  • 1 tablespoon all-purpose flour
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Optional: green onions for garnish


Instructions

  1. In a saucepan, melt butter over medium heat.
  2. Stir in the flour and cook for about 2 minutes to create a roux.
  3. Gradually whisk in the milk, stirring continuously until thickened.
  4. Add garlic powder, salt, and pepper, followed by the shredded cheese. Stir until melted.
  5. In a large bowl, combine cooked pasta and BBQ chicken, then fold in cheese sauce until well-coated.
  6. Transfer the mixture to a baking dish, topping with additional cheese if desired.
  7. Bake in a preheated oven at 350°F (175°C) for about 20 minutes, or until bubbly and golden on top.

Notes

For extra flavor, marinate chicken in BBQ sauce beforehand. Don’t overcook pasta; al dente is ideal.
