Ingredients
- 2 cups cooked pasta (elbow macaroni or shells)
- 2 cups shredded BBQ chicken (store-bought or homemade)
- 2 cups shredded cheddar cheese (mozzarella for extra gooeyness)
- 1 cup milk (whole or low-fat)
- 1 tablespoon butter
- 1 tablespoon all-purpose flour
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Optional: green onions for garnish
Instructions
- In a saucepan, melt butter over medium heat.
- Stir in the flour and cook for about 2 minutes to create a roux.
- Gradually whisk in the milk, stirring continuously until thickened.
- Add garlic powder, salt, and pepper, followed by the shredded cheese. Stir until melted.
- In a large bowl, combine cooked pasta and BBQ chicken, then fold in cheese sauce until well-coated.
- Transfer the mixture to a baking dish, topping with additional cheese if desired.
- Bake in a preheated oven at 350°F (175°C) for about 20 minutes, or until bubbly and golden on top.
Notes
For extra flavor, marinate chicken in BBQ sauce beforehand. Don’t overcook pasta; al dente is ideal.
