Description
Juicy marinated chicken kabobs grilled to perfection, bursting with Mediterranean flavors.
Ingredients
- 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
- 1/4 cup olive oil
- Juice of 2 lemons
- 4 cloves garlic, minced
- 2 tsp dried oregano
- 1 tsp salt
- 1/2 tsp black pepper
- 1 red onion, cut into wedges
- 1 bell pepper (any color), cut into chunks
- Skewers (soaked in water for 30 minutes if wooden)
Instructions
- Whisk together olive oil, lemon juice, minced garlic, oregano, salt, and pepper in a bowl.
- Add the chicken cubes, making sure each piece is well coated in the marinade. Cover and refrigerate for at least 30 minutes (or up to 2 hours).
- Preheat your grill to medium-high heat.
- Thread marinated chicken, red onion, and bell peppers onto the skewers, alternating as you go.
- Grill the skewers for about 10-15 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
- Serve hot and enjoy!
Notes
Best enjoyed with tzatziki sauce and fresh pita bread. You can substitute vegetables as desired.
