Description

Juicy marinated chicken kabobs grilled to perfection, bursting with Mediterranean flavors.


Ingredients

  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1/4 cup olive oil
  • Juice of 2 lemons
  • 4 cloves garlic, minced
  • 2 tsp dried oregano
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 red onion, cut into wedges
  • 1 bell pepper (any color), cut into chunks
  • Skewers (soaked in water for 30 minutes if wooden)


Instructions

  1. Whisk together olive oil, lemon juice, minced garlic, oregano, salt, and pepper in a bowl.
  2. Add the chicken cubes, making sure each piece is well coated in the marinade. Cover and refrigerate for at least 30 minutes (or up to 2 hours).
  3. Preheat your grill to medium-high heat.
  4. Thread marinated chicken, red onion, and bell peppers onto the skewers, alternating as you go.
  5. Grill the skewers for about 10-15 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
  6. Serve hot and enjoy!

Notes

Best enjoyed with tzatziki sauce and fresh pita bread. You can substitute vegetables as desired.
