Description
A delightful summer dish featuring grilled zucchini drizzled with honey and topped with creamy goat cheese.
Ingredients
- 2 medium zucchini, sliced into 1/4-inch thick rounds
- 2 tablespoons olive oil
- Salt and pepper, to taste
- 4 ounces goat cheese, crumbled
- 2 tablespoons honey
- Fresh basil leaves, for garnish
Instructions
- Preheat your grill to medium-high heat.
- Combine the zucchini slices, olive oil, salt, and pepper in a bowl. Toss until well-coated.
- Place the zucchini on the grill and cook for about 3-4 minutes on each side, until you see nice grill marks and they are tender.
- Remove from the grill and arrange on a serving platter.
- Sprinkle the crumbled goat cheese over the grilled zucchini.
- Drizzle with honey and top with fresh basil leaves to serve.
Notes
For a hint of spice, sprinkle red pepper flakes along with salt and pepper. Feel free to experiment with different cheeses or add other vegetables to the grill for variety.
