Description

A delightful summer dish featuring grilled zucchini drizzled with honey and topped with creamy goat cheese.


Ingredients

  • 2 medium zucchini, sliced into 1/4-inch thick rounds
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 4 ounces goat cheese, crumbled
  • 2 tablespoons honey
  • Fresh basil leaves, for garnish


Instructions

  1. Preheat your grill to medium-high heat.
  2. Combine the zucchini slices, olive oil, salt, and pepper in a bowl. Toss until well-coated.
  3. Place the zucchini on the grill and cook for about 3-4 minutes on each side, until you see nice grill marks and they are tender.
  4. Remove from the grill and arrange on a serving platter.
  5. Sprinkle the crumbled goat cheese over the grilled zucchini.
  6. Drizzle with honey and top with fresh basil leaves to serve.

Notes

For a hint of spice, sprinkle red pepper flakes along with salt and pepper. Feel free to experiment with different cheeses or add other vegetables to the grill for variety.
