Description

A cozy bowl of soup combining robust beef with wholesome macaroni and nutritious vegetables for the ultimate comfort meal.


Ingredients

  • 1 pound ground beef
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 6 cups beef broth
  • 1 cup macaroni
  • 1 can diced tomatoes (14.5 oz)
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Optional: Fresh parsley for garnish


Instructions

  1. In a large pot, brown the ground beef over medium heat. Drain excess fat.
  2. Add the chopped onion, carrots, celery, and garlic. Sauté until softened, about 5 minutes.
  3. Pour in the beef broth, and then stir in the diced tomatoes and Italian seasoning.
  4. Bring to a boil, then add the macaroni. Reduce the heat and simmer for 15-20 minutes, or until the macaroni is tender.
  5. Season with salt and pepper.
  6. Serve hot, garnished with fresh parsley if desired.

Notes

This soup is great on its own or served with crusty bread or a side salad. For added flavor, consider a sprinkle of shredded cheese on top.
