Ingredients
- 1 pound ground beef
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 6 cups beef broth
- 1 cup macaroni
- 1 can diced tomatoes (14.5 oz)
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Optional: Fresh parsley for garnish
Instructions
- In a large pot, brown the ground beef over medium heat. Drain excess fat.
- Add the chopped onion, carrots, celery, and garlic. Sauté until softened, about 5 minutes.
- Pour in the beef broth, and then stir in the diced tomatoes and Italian seasoning.
- Bring to a boil, then add the macaroni. Reduce the heat and simmer for 15-20 minutes, or until the macaroni is tender.
- Season with salt and pepper.
- Serve hot, garnished with fresh parsley if desired.
