This Ultimate Moist Meatloaf is flavorful, budget-friendly, and a family favorite, perfect for any occasion.
Ingredients
- 2 tablespoons olive oil
- 2 cups yellow onion, diced (about 1 large onion)
- 3 lbs ground beef (80/20 fat ratio)
- 1 cup seasoned breadcrumbs
- 3 large eggs, beaten (room temperature preferred)
- 1/2 cup whole milk (2% works as a substitute)
- 1 tablespoon kosher salt
- 1 tablespoon freshly ground black pepper
- 1 tablespoon onion powder
- 1 1/2 teaspoons garlic powder
- 1 teaspoon Italian seasoning
- 1 cup ketchup
- 2 tablespoons Worcestershire sauce
- 3 tablespoons fresh parsley, chopped (for garnish)
- 1/3 cup brown sugar (light or dark)
- 1 1/2 cups ketchup (for glaze)
Instructions
- Preheat your oven to 350°F. Line a half-sheet pan with heavy-duty aluminum foil and lightly spray it with cooking spray.
- In a large skillet, heat the olive oil over medium heat. Add the diced onions and cook until golden brown and tender, about 8-10 minutes. Transfer them to a large mixing bowl to cool slightly.
- In the bowl with the cooled onions, combine the ground beef, seasoned breadcrumbs, beaten eggs, milk, salt, pepper, onion powder, garlic powder, Italian seasoning, ketchup, and Worcestershire sauce. Mix gently with clean hands.
- Transfer the mixture to the prepared sheet pan. Shape it into a log approximately 12 inches long and 4 inches wide. For the glaze, whisk together the brown sugar and ketchup until smooth and spread it evenly over the meatloaf.
- Cover with aluminum foil and bake for 45 minutes. Then remove the foil and bake for an additional 15-20 minutes, until the internal temperature reaches 160°F. Allow it to rest for 10 minutes before slicing.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3-4 days, or freeze for up to 3 months. Reheat to an internal temperature of 165°F.
