Description

A delightful, hearty dish made with tender chicken, pillowy gnocchi, and vibrant spinach, perfect for cozy weeknight dinners.


Ingredients

  • 2 lbs boneless, skinless chicken breast or thighs
  • 1 lb gnocchi (fresh or shelf-stable)
  • 4 cups fresh baby spinach
  • 1 cup sundried tomatoes (preferably oil-packed)
  • 4 cloves garlic, minced
  • 2 cups low-sodium chicken broth
  • 1/2 cup cream or cream cheese
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and pepper to taste


Instructions

  1. Grease the slow cooker with a light coating of oil.
  2. Place the chicken on the bottom, seasoning it generously with salt, pepper, and Italian herbs.
  3. Add the minced garlic, sundried tomatoes, and fresh spinach, layering them over the chicken.
  4. Pour the chicken broth over everything to keep your chicken juicy.
  5. Cover and set your slow cooker to low. Cook for about 240 minutes.
  6. When there’s about 30 minutes left on the timer, gently add the gnocchi and allow them to cook until tender.
  7. Stir in the cream or cream cheese until well incorporated and let it simmer for the final few minutes.

Notes

For optimal results, brown the chicken in a skillet before adding it to the slow cooker. Adjust salt according to taste, especially considering the saltiness of sundried tomatoes.
