Description
A delightful, hearty dish made with tender chicken, pillowy gnocchi, and vibrant spinach, perfect for cozy weeknight dinners.
Ingredients
- 2 lbs boneless, skinless chicken breast or thighs
- 1 lb gnocchi (fresh or shelf-stable)
- 4 cups fresh baby spinach
- 1 cup sundried tomatoes (preferably oil-packed)
- 4 cloves garlic, minced
- 2 cups low-sodium chicken broth
- 1/2 cup cream or cream cheese
- 1 tsp dried oregano
- 1 tsp dried basil
- Salt and pepper to taste
Instructions
- Grease the slow cooker with a light coating of oil.
- Place the chicken on the bottom, seasoning it generously with salt, pepper, and Italian herbs.
- Add the minced garlic, sundried tomatoes, and fresh spinach, layering them over the chicken.
- Pour the chicken broth over everything to keep your chicken juicy.
- Cover and set your slow cooker to low. Cook for about 240 minutes.
- When there’s about 30 minutes left on the timer, gently add the gnocchi and allow them to cook until tender.
- Stir in the cream or cream cheese until well incorporated and let it simmer for the final few minutes.
Notes
For optimal results, brown the chicken in a skillet before adding it to the slow cooker. Adjust salt according to taste, especially considering the saltiness of sundried tomatoes.
