Description

A comforting and creamy Italian sausage soup with tortellini, prepared effortlessly in a slow cooker.


Ingredients

  • 1 lb Italian sausage, browned, drained, and chopped
  • 1 (15 oz) can Italian diced tomatoes
  • 3-4 cups fresh spinach
  • 4 cups vegetable or chicken broth
  • 8 ounces cream cheese, cubed
  • 1 (20 oz) bag frozen cheese tortellini
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tbsp Italian seasoning
  • ½ tbsp black pepper


Instructions

  1. In your slow cooker, add the browned and chopped Italian sausage, followed by the broth, diced tomatoes, cubed cream cheese, garlic powder, onion powder, Italian seasoning, and black pepper. Mix well.
  2. Set your slow cooker to high and let it cook for 3-4 hours, or on low for 6-8 hours, until the cream cheese has fully melted.
  3. Stir in the fresh spinach and frozen cheese tortellini. Cook for an additional 30 minutes on high.
  4. Serve hot with fresh toppings and enjoy!

Notes

To enhance the soup, serve with crusty bread and fresh parsley. For left overs, store in the refrigerator for up to three days.
